This roasted veg and lentil salad is a very quick and easy meal, perfect to whip up after you’ve put the kids to bed and you want something that won’t take hours to prepare. Those evening hours are precious to us mum’s!
1 big handful fresh green beans
A couple of handfuls of chopped lettuce
1/2 avocado, cut into chunks
2 handfuls of cherry tomatoes
1 pack puy lentils
1 tsp paprika
1/2 tsp chilli
Juice of 1 lemon
1 Tbsp oil
Salt & pepper to season
All you need to do is coat the cauliflower and green beans in the spices, drizzle with oil and then bake in the oven for 15 mins at 180.
Simply chuck all of the other ingredients in a bowl and stir with the lemon juice and olive oil.
Then add the cauliflower and green beans to the bowl and stir. Season with salt and pepper!
Great served with some chunky bread and butter.
