Serves 4 (2 adults & 2 babies/toddlers)
* Will keep in the fridge for 1 day
1/4 cucumber, grated
1 generous handful of cubes of cheese
Wholewheat pasta (approx 300g)
1 Tsp dresh or dried parsley
1 Large avocado or 2 small, chopped into thin chunks
1-2 Tbsp of philadelphia or mayonnaise
1 Carton or can of cannelini beans
*Add salt & pepper to adult portions
Add the pasta to a pan of boiling water.
Meanwhile, rinse and drain the cannelini beans. Mix together all the other ingredients in a large bowl, except for the philadelphia/mayo.
Once the pasta has finished cooking, add to the bowl of ingredients and stir.
Now add the philadelphia or mayo and stir through.
Add the salt and pepper to adult portions. I usually add some rocket or spinach leaves to my portion and drizzle with olive oil.
