6 Free Range Eggs
200ml milk (I use oatly)
1/2 Red pepper, finely chopped
1/2 courgette, grated
1/2 brocoli, cooked and finely chopped (optional, but very tasty)
2 Tomatoes, thinly sliced
Pre-heat oven to 180.
Whisk the eggs and milk together in a large bowl with a pinch of pepper.
Add the pepper, courgette and broccoli to the bowl and stir.
Tip mixture into a flan dish.
Scatter the cheese and sliced tomatoes over the top and bake for 25-30 mins. Check the middle is cooked by inserting a knife.
