Healthy Pitta Bread Pizzas

Ingredients

Wholemeal Pittas

Sliced Peppers

Sliced Tomatoes

Sliced Avocado

Dried Mixed Herbs or Parsley

1 Carton Chopped Tomatoes

1 Tsp Olive Oil

Grated Cheese

Method

Pre-heat oven to 180

Add the carton of chopped toms to a pan with 1tsp olive oil. Boil for 5 mins. Then blend the tomatoes with a hand blender or in a food processor. Return to the pan and boil for a further 1-2 mins. Remove from heat.

Lay out the pittas on a tray. Slice in half for under 1’s, unless they’re capable of chewing thicker slices then leave them whole.

Scoop some of the tomato sauce on to each pitta and spread with the back of the spoon.

Layer your toppings and finish with a sprinkling of cheese and dried herbs.

Bake in oven for 8 mins. Then use a pizza slicer to slice into strips. Or let your little ones chomp away at the whole pizza!
