Vegetable Curry For Little Ones

This vegetable curry recipe isn’t just for little ones, but it’s made with little ones in mind! It’s mild with no added salt, but packed full of nutrients and flavour. I find that Molly enjoys curry more than any other food as it’s got more interesting flavours.

If you’re giving this to a baby under 1 then I’d recommend slightly mashing it so that it’s a bit easier for them to eat. Of course you can load spoons for them to feed themselves if you’re following baby led weaning. Like all of my recipes, it’s very quick and easy to make and can be enjoyed by all the family.

Serves 4

1/2 Brocoli, chopped into small florets

2 handfuls of sliced frozen peppers or 1 fresh red pepper finely sliced

1 cup of frozen peas

1/2 onion, finely chopped

1 clove garlic, finely chopped

1 courgette, grated

40g desiccated coconut

1 can chopped tomatoes

1 tbsp olive oil

1 tsp cumin

1 tsp mild curry powder

1 tsp dried coriander

250ml water

240g rice

Firstly, heat the oil in a wok or saucepan. Add the spices, onion, garlic and peppers. Fry for 8 mins.

Add the rest of the ingredients to the pan and cook on low for 20 mins. Add more water if needed.

Meanwhile, cook the rice according to the instructions on the packet.

When both are cooked, serve together with some warm naan bread or pitta bread!

Big love x
