Watermelons are my favourite fruit – they’re the perfect summer snack. Great for little ones too. Sometimes it can prove challenging to entice a toddler to drink when they’re busy having fun in the sunshine! However, they can dehydrate very quickly so it’s important to keep them hydrated. Watermelons are perfect as a hydrating snack as they contain 92% water! They also contain essential electrolytes which will also improve sufficient hydration. Packed full of vitamins and goodness – they really are a summer essential for you and your family. They’re also great in smoothies!
Sometimes when you buy a watermelon it’s hard to eat it all before it goes off. The best solution is freezing chunks of it – reduces waste and is perfect for refreshing smoothies. I usually cut it into cubes and wrap in cling film – I would like to buy some alternative non-plastic storage pots though. I’m not a fan of wrapping things in cling film. However, it does the trick for now. Freeze in mini portions and then when you’re ready to use for a smoothie, run under cold water to separate the cubes. The following smoothie recipe is simple, but incredibly delicious. It’s ideal for sipping on those sweltering summer days. You could also freeze into lollies!
Recipe: (makes 2-3 smoothies)
- 1 large handful of watermelon chunks (frozen or fresh)
- 1/2 filled smoothie blender of apple juice (fill the rest with water)
- 3 Tbsp desiccated coconut or replace the water with coconut water
- 1 handful of mango chunks
Blend until smooth & enjoy!
