Super easy low-fat lemon chicken recipe

Having a newborn baby is extremely tiring, especially if your little monkey doesn’t like to be put down! Any spare time you have is usually spent combing sick out of your hair, finally getting round to brushing your teeth and making that all important cup of coffee! Therefore, cooking dinner can prove quite a challenge. That’s why I love my slow cooker. It’s so easy to chuck everything in and leave it for the rest of the day whilst you get back to changing nappies and cuddling your little bubba. The following recipe is low-fat and well balanced, and more importantly – super tasty! With a few simple cheats, this recipe is so easy you can assemble it all in under 5 mins!


1 pack skinless chicken thighs

1/4 bag frozen peppers

2 handfuls frozen chopped onions

1 cup veg stock

1 tsp thyme

Juice of 1/2 lemon & 2 slices of lemon

A couple of pinches of pepper

2 Tablespoons jalapenos (optional)

Serve with microwave wholegrain rice

Place all the ingredients into the slow cooker and turn on low for 6-7 hours or high for 4-5 hours. Stir occasionally and serve with rice.
