Slow Cooker Vegetarian Tagine

I’m secretly loving this colder weather we’ve been having recently. Mainly because it gives me an excuse to wear baggy jumpers and comfy clothes. However, it’s also great to be able to have more hearty meals cooked in the slow cooker! This recipe is full of nutritious vegetables and tastes great with either cous cous or rice.

(Serves 4)


1 large butternut squash, peeled and chopped

1 large sweet potato or 2 small, peeled and chopped

1 handful chopped dried apricots

1 red pepper, chopped

1/2 onion

1 clove garlic

1/2 tsp mixed spice

1 can chopped tomatoes

1. 5  pints veg stock

1/2 tsp pepper

Juice of 1/2 lemon

Sprinkle of salt

1 tsp paprika

1 handful of fresh coriander

1 Tbsp olive oil

Throw all of the ingredients in the slow cooker and let it cook away! Add more water if it’s thickening too much.  I usually put it on for 7-8 hours on low.  Serve with a dollop of natural yogurt!
