Slow Cooker Sticky Coconut & Vegetable Rice

Another slow-cooked delight for you to try!! This actually happened by accident – I just threw a load of random ingredients together and it surprisingly worked! We didn’t have much left in the cupboards due to the lack of food in the supermarkets (thanks to the snow). However, I’m thrilled with this recipe and I’ll be cooking it on a regular basis from now on. The best part was that Molly absolutely loved it – she gobbled it all up very quickly. It would be fine to give to younger babies too if you’re following Baby Led Weaning – you could do loaded spoons. Alternatively, you could mash it up a little or puree it if you feel more comfortable doing that.

Serves 4


1 can light coconut milk

1 carton chopped tomatoes

150g frozen peas

240g rice (rinse first)

2 frozen spinach balls or two handfuls of fresh spinach

1/2 onion, finely chopped

1 clove garlic, finely chopped

500ml water

150g dessicated coconut

1 stock cube

1 tsp paprika

1 tbsp basil or mixed herbs

1/4 tsp pepper


All you have to do is grease the slow cooker with some olive oil, and then chuck all of the ingredients in to the slow cooker and cook on low for 4 hours!

You may need to add more water Рonly  if the rice sticks to the sides. Give it a good stir every now and then.
