Meat Free Fajitas Recipe

This recipe is very quick and easy – a perfect midweek meal. Fajita’s are always a great option when you want something quick, but tasty. I love those kind of dinners where you can lay everything out on the table and dig in. It’s somehow more sociable and enjoyable to eat this way. We usually buy the fajita box kits. This week I bought Asda’s own version which was just as great. Traditionally, you would add chicken, onions & peppers to the spices. However, I wanted to do something a bit different and without meat for a change. It’s just nice to mix things up sometimes! You could adapt this recipe and add different veg etc if you wanted, but I personally think the combination of flavours are just right!

Ingredients:

  • 1 pack puy lentils
  • 1 red or yellow pepper, chopped into strips
  • 1/2 onion, chopped finely
  • 1 can cannelloni beans
  • 1 cup frozen peas
  • 1/2 courgette, grated

Method:

Heat 1 tbsp oil in a large frying pan. Add the onion, peppers, courgette & peas. Fry for 6 mins on a medium heat. Add the fajita seasoning and stir well. Finally, add the beans & lentils & continue to fry for 2 mins. Gently warm the tortilla wraps in the microwave for 10-15 seconds. Now you’re ready to serve! Enjoy with fresh chopped tomatoes & natural yogurt or sour cream. I used some dairy free sour cream from Asda.
