I thought I’d share this Baby Led Weaning recipe with you as it was such a hit with Molly! Obviously Molly is a toddler now, but I still cook similar things that I did when she was younger. That’s the great thing about Baby Led Weaning – the food can be enjoyed by the whole family. If you’re giving it to a young, newly weaned baby then you might want to cut them into slices instead, but some babies manage fine with larger pieces.
Over the last week Molly’s been very grizzly due to teething and receiving her vaccinations. Every meal time has been a bit of a battle. I’ve been sticking to things that I know she’ll eat, such as avocado sandwiches, veggie crisps, fruit and pasta! I wanted to try something different, but using flavours I know she likes, so I made cheesy courgette ‘quiches’. I had some too and they were really yummy. They’re great for packed lunches the next day too! The best thing about this recipe is that it’s incredibly easy and very versatile, you could even trust your hubby with this one (sorry dads – I know some of you are fab cooks really).
You will need 1 muffin tray.
Makes 6 muffins.
1/2 yellow pepper chopped finely
2 large eggs
1 tsp dried parsley or basil
Butter or oil for greasing the tray
Whisk the eggs in a mixing bowl.
Now add the rest of the ingredients to the bowl and stir (leave a little bit of the cheese to one side).
Grease the muffin tray with butter or oil.
Spoon the mixture into the muffin tray and fill just over half way.
Now sprinkle with the rest of the cheese – grate a little bit more if need be.
Serve with pasta or potato wedges!
