Slow-cooker Vegetable & Ricotta Cannelloni – BLW Recipe

This recipe is very easy to throw together for your little one. Of course, your whole family can eat it too, but you might find it a little bland without salt. I happily eat this myself though and just add a sprinkle of salt over my portion. It’s very adaptable, you can basically use any vegetables you have, as long as you can easily mash or blend them. It’s great not having to worry about trying to prepare dinner with a tired, hungry baby/child at that dreaded time of the day!

Ingredients:

4 x handfuls of Spinach

1 red Pepper, chopped

1 peeled carrot, chopped

1/2 brocolli, chopped

2 x cans chopped toms

1 clove garlic, finely chopped

1 tbsp olive oil

400g ricotta or mozzarella

6 x fresh lasagne sheets

Small handful grated cheese for sprinkling over the top

Method:

Boil all of the veg until soft. Then blend with a hand blender or food processor, add the garlic whilst blending. You can also mash if you don’t have either of these.

Rub oil onto the inside of the slow cooker.

Lay out each lasagne sheet and spread a layer of the ricotta and blended veg. Don’t overfill. Roll the sheet from short side to short side. Place into the slow cooker.

Pour over the two cans of chopped tomatoes. Sprinkle with a little grated cheese and cook for 4-5 hours on low. You may need to check on it and push a wooden spoon down the sides to prevent it from sticking too much.

I chopped it up into pieces and let Molly feed herself, but next time I might mash it and spoon feed her, as sometimes I just can’t deal with the mess of baby led weaning!!!
