It’s been a while since I’ve posted a Baby Led Weaning recipe, but I thought I’d share Molly’s favourite dinner with you – lentil and courgette fritters! I think Molly loves these as they’re really easy for her to pick up. It’s such a quick dinner to throw together and you can add any other vegetables you like. I sometimes add sweetcorn or grated pepper.
They’re fairly soft to chew too so I don’t worry so much about Molly struggling with them. Lentils are wonderful little things! They’re high in protein, fibre and magnesium. They’re naturally low in fat so great for heart health. I do like to add some cheese to this recipe just to ensure that Molly’s fat and calcium intake is sufficient. I actually enjoy these myself. I often have them with a pitta bread and some salad!
Makes 4-5 fritters
1/2 courgette, grated
1/4 pack of puy lentils
A small handful of grated cheese
A sprinkle of pepper
Mix all the ingredients together in one bowl.
Heat 4 tablespoons of olive oil in a frying pan.
Scoop out the mixture with a spoon and dollop in rounds onto the frying pan. There should be enough to make three fritters.
Push the fritters down with a spatula and fry on a medium heat for 2 mins. Flip the fritters over and fry on the other side for 2-3 mins. Both sides should be golden, but not too dark.
Leave to cool on a piece of kitchen towel. Slice into fingers.
